Dandelion Greens with Garlic

About the Recipe

Dandelions are really fun especially when you're just beginning your foraging adventures, they are almost everywhere. in my yard I like to keep an area roped off to prevent any of the puppies into the area so that they remain clean. All of the dandelion can be used for either food or medicinal purposes. It's really an interesting plant

Ingredients

2 cup dandelion stems and leaves cleaned

1 Medium chopped onion

1-2 clove garlic crushed and chopped

2 Tablespoons olive oil

1/2 lemon or tablespoon of lemon juice

1 teaspoon of sea salt to taste

Red pepper flakes to taste if desired


Preparation

  • Chop and wash your dandelion greens thoroughly

  • Add the greens to a pot of boiling water and cook uncovered for about 20 minutes or until soft

  • Pour into a strainer to remove the water and squeeze the excess water out by hand (when its cool enough to touch)

  • Heat oil in a frying pan on meduim heat

  • Saute onions until translucent

  • Add the garlic and saute with the onions (garlic cooks very quickly so you want to add them when the onions are almost done)

  • Add the dandelions to the onions and garlic sprinkle a little sea salt (I like to add some red pepper flakes)

  • Drizzle with lemon juice when ready to serve
